1 cup grated tasty cheese
1 cup grated mozzarella
⅔ cup crumbled feta
1 small red onion, thinly sliced
½ cup fresh coriander leaves
3 cups barbecued chicken meat, chopped
2 long red chillies, finely sliced
8 plain flour tortillas
1 container guacamole to serve
- Place a large frying pan or chargrill pan over high heat and heat until hot. Combine cheeses, red onion, coriander, chicken and chilli. Place one wrap into the pan and top with a quarter of the mixture.
- Place another wrap on top to sandwich together, and cook until cheese melts and the bottom wrap is crispy and golden brown. Carefully flip the quesadilla over and brown on the other side.
- Remove from the frying pan and allow to cool slightly before slicing quesadilla into wedges. Repeat the process with remaining filling. Serve quesadillas with guacamole and sour cream if desired (see below). Garnish with coriander sprigs.
