2 ¼ cups plain flour
2 tsp caster sugar
300 g pork mince
2 tsp sesame oil
1 tsp fish sauce
1 tbsp soy sauce
1 tsp cornflour
6 spring onions or green onions thinly sliced
200 g fresh snow peas steamed to serve
1 bunch broccolini steamed to serve
½ cup fresh bean sprouts to serve
- To make dough, combine flour, sugar and 1 teaspoon each salt and ground black pepper in a bowl. Add ½ cup boiling water, mix through and add ½ cup cold water, stirring until combined. Turn out onto a floured surface and knead for 10 min or until a smooth elastic dough forms. Wrap with plastic wrap and set aside for 15 min.
- Meanwhile, to make filling, combine mince, sesame oil, fish sauce, soy sauce, cornflour, spring/green onions and 1 teaspoon each ground white and black pepper in a bowl until well combined.
- Divide dough into 8 portions. Roll out each portion of dough into a 15cm circle. Fill with 2 tablespoons heaped mince mixture. Using your fingertips, gently twirl and pinch the dough together to seal. Pinch off any excess dough on top and flatten slightly.
- Heat 1 tablespoon oil in a large non-stick frying pan over a medium-low heat. Add 4 of the pies to pan and cook for 5 min on each side until lightly golden and cooked through. Set aside and repeat with remaining pies, adding more oil if necessary. Serve with steamed vegetables, and soy sauce for dipping.
