3/4 cup butter, chopped and softened to room temperature
3/4 cup brown sugar
1/4 cup caster sugar
2 teaspoons vanilla extract
1 1/2 cups plain flour
1 cup chocolate chips
12 store bought cannoli shells
Powdered sugar for dusting
Melted chocolate for drizzling
To make the cookie dough, place butter, brown sugar and caster sugar in the bowl of an electric mixer and mix on medium speed.
While cookie dough is mixing, add vanilla extract and then slowly - one large spoonful at a time - add the flour, waiting until each spoonful of the flour is combined before adding another spoonful.
Once all the flour is added, add chocolate chips and mix until combined. Turn off electric mixer.
Place cookie dough into a large zip-lock bag, making sure all the air is out of the bag before sealing it up. Using scissors, snip one of the corners off the bottom of the bag to create a 3cm hole.
Squeeze the piping bag to push the cookie mixture into either side of the cannoli shell. Continue with all remaining cannoli sheets.
Dust with powdered sugar and lightly drizzle melted chocolate over the cannolis, then serve.
