½ cup desiccated coconut
337 g packet mint slice chocolate biscuits
125 g cream cheese, chopped, at room temperature
- Sprinkle coconut over an oven tray. Cook in a moderate oven (180C) for 3 to 4 minutes, or until lightly toasted, stirring halfway through. Remove. Cool.
- Process biscuits in food processor to form coarse crumbs. Add cream cheese. Process until well combined. Transfer to a bowl.
- Roll tablespoons of mixture into balls. Coat in coconut. Place in a single layer in an airtight container. Refrigerate until right before serving.
