Doughnuts are on point right now. Wow your guests with this over-the-top doughnut ice-cream sandwich.
100 g chopped dark chocolate
¼ cup thickened cream
1 teaspoon vanilla extract
6 fresh cinammon doughnuts
1 tub peanut butter ice-cream
½ cup unsalted peanuts chopped
- Place 100g chopped dark chocolate in a bowl. Heat ¼ cup thickened cream in a small saucepan until very hot but not boiling. Remove from heat, stir through 1 teaspoon vanilla extract and pour over the chocolate. Stand for 2 min then stir until smooth. Stand for a further 2-3 min to allow to cool slightly.
- Split 6 fresh cinnamon doughnuts in half and sandwich together with scoops of peanut butter ice-cream. Arrange on a serving platter then spoon over the chocolate sauce. Serve topped with chopped fresh peanuts.
