Chocolate fudge slice

A quick and easy chocolate slice that’s a real crowd-pleaser and suitable for new bakers. So easy, there's no baking involved at all – you can't not make it!

Ingredients

2 eggs, lightly beaten

250 g butter

¾ cup sugar

3 tbsp cocoa powder

1 vanilla essence

2 x 500 g plain sweet biscuits, crushed into chunks

Chocolate icing

3 ¼ cups icing sugar

2 tbsp cocoa powder

50 g melted butter

3 tbsp boiling water

1 tsp vanilla extract

Method

  1. Line a 30cm x 24cm sponge roll or baking tin with baking paper.
  2. Place eggs, butter, sugar, cocoa and vanilla in a pot over low heat. Stir constantly, removing mixture from heat just before it comes to a simmer. Mix in crushed biscuits. (To crush biscuits, place them in a sealed plastic bag and bash with a rolling pin until chunky crumbs. Do not crush in a food processor as they will be too fine.) Press mixture firmly into prepared tin.
  3. Make the chocolate icing by mixing together all ingredients and beat until smooth.
  4. Ice with Chocolate Icing and, when set, cut into pieces.
