1 cup plain flour
½ cup caster sugar
2 teaspoons baking powder
⅓ cup baking cocoa
1 cup milk
60 g butter, melted and cooled
2 eggs, lightly beaten
1 teaspoon vanilla extract
¾ cup brown sugar softened
extra 2 tablespoons baking cocoa
1 tbsp icing sugar plus extra to serve
1 cup thickened cream, to serve
- Preheat the oven to 180°C (160°C fan forced). Lightly grease a shallow 6-cup pudding dish. Sift the flour into a bowl with the sugar, baking powder and cocoa.
- Add milk, butter, eggs and vanilla. Mix with a wooden spoon until just combined. Transfer to prepared dish.
- In a large jug, combine brown sugar and the extra cocoa powder. Pour over 1 cup boiling water and stir to combine. Carefully pour over the pudding mixture. Bake for 30 min. Dust with icing sugar and serve with double thick cream, ice-cream or custard.
