Just when we thought we’d seen every Christmas food trend going - along comes Christmas pancakes!
It’s the latest festive food trend sweeping Instagram, and frankly we can’t get enough of them!
Whether it be pancake Rudolphs - featuring bacon as antlers! - or Santa pancakes with strawberry hats, they’re just TOO adorable.
And we are LOVING all the Christmas Tree pancakes hitting social media as well, which feature pancakes in varying sizes placed from bigger to smaller to create a tree effect.
Most of the variations on social media show the pancakes coloured green with food colouring - but this version of plain, fluffy pancakes with dollops of whipped cream and a sprig of rosemary just looks so beautiful. And don’t you love the Santa’s helper wood chopper figurines!?
All you really need is a good pancake recipe - see below - and your imagination to be part of the trend. And we know the kids would LOVE them come Christmas morning! Go on ... give it a go!
BEST EVER PANCAKES
1 3/4 cups self-raising flour
2 tablespoons caster sugar
1 cup milk
3 eggs, lightly beaten
2 teaspoons vanilla essence
1. To make pancake batter, combine flour and sugar in a large bowl. Combine milk, eggs and vanilla in a medium jug. Whisk well. Whisk into flour mixture until smooth.
2. Brush melted butter over base of a large, non-stick frying pan over a medium heat. Pour 1/3 cup batter into pan. Repeat to make two pancakes.
3. Cook for about 2 to 3 minutes, or until bubbles appear on the surface. Turn over. Cook for a further 2 to 3 minutes, or until golden underneath. Remove. Cover to keep warm. Repeat with remaining melted butter and batter to make eight pancakes in total.
