Ingredients
1 Pink Lady apple
1 telegraph cucumber
2 limes, thinly sliced
1 cup elderflower cordial
1 litre apple juice
2 cups soda water
1 cup lemonade
12 ice cubes
mint, to decorate
Method
- Cut apple into quarters. Remove core and discard. Thinly slice apple. Using a vegetable peeler, cut both sides of cucumber into long ribbons, until you reach the seeds. Discard the seeds.
- Place apple, cucumber and limes into a large punch jug or bowl. Add cordial and apple juice. Stir until combined. Refrigerate for 1 hour.
- Just before serving, add soda water, lemonade and ice cubes. Stir to combine. Decorate with mint leaves
