Classic lobster roll

We’ve got the Americans to thank for lobster rolls. With cooked lobster, mayo and celery on soft hot dog buns, these rolls make for a delicious snack or lunch.

Ingredients

1 lobster tail

1 small cooked lobster or lobster tail

½ celery stalk, finely diced

3 tsp mayonnaise

1 good squeeze fresh lemon juice

2 tsp snipped chives

3 soft finger rolls or hot dog rolls, to serve

Soft butter

baby cos lettuce, to serve, shredded

ground cayenne pepper, to season (optional)

Method

  1. Extract the meat from the lobster and cut into bite-sized pieces. Mix with the celery, mayo, lemon and chives and season well.
  2. Split the buns down the centre but not all the way through. Spread the outside side edges of the rolls with butter then fry on both sides in a hot pan until golden.
  3. Fill the rolls with a little shredded lettuce and the lobster mix and sprinkle with a little cayenne, if you like.
