1 lobster tail
1 small cooked lobster or lobster tail
½ celery stalk, finely diced
3 tsp mayonnaise
1 good squeeze fresh lemon juice
2 tsp snipped chives
3 soft finger rolls or hot dog rolls, to serve
baby cos lettuce, to serve, shredded
ground cayenne pepper, to season (optional)
- Extract the meat from the lobster and cut into bite-sized pieces. Mix with the celery, mayo, lemon and chives and season well.
- Split the buns down the centre but not all the way through. Spread the outside side edges of the rolls with butter then fry on both sides in a hot pan until golden.
- Fill the rolls with a little shredded lettuce and the lobster mix and sprinkle with a little cayenne, if you like.
