2.2 kg rack of lamb (4 bone)
Sea-salt flakes and freshly ground pepper, to season
1 bulb garlic, unpeeled, cloves separated
- Preheat oven to 200°C. Put beef in a roasting pan and season. Roast for 1 hour 35 minutes for medium-rare or until cooked to your liking. Add garlic and eschalots to pan for final 15 minutes of cooking time. Set aside for 10 minutes to rest. Transfer to a serving platter. Serve.
