Coconut and chia cream with berries
easy - Serves 2 - Vegetarian - gluten-free - nut-free - egg-free - pregnancy-safe

Mix this up before you go to bed and breakfast is ready to go when you wake up

Ingredients

2 Tbsp chia seeds

125 ml (½ cup) Light Coconut Milk

130 g (½ cup) low-fat Greek-style plain yoghurt

60 ml (½ cup) skim milk

3 tsp honey

3 chopped strawberries

Method

  1. Combine chia seeds, Light Coconut Milk, yoghurt, skim milk and honey in a bowl. Cover and refrigerate 
for overnight to thicken.
  2. Spoon mixture into 
serving bowls. Top each with 
3 chopped strawberries 
and serve.
