2½ cups rolled oats
700 ml coconut water
80 g flaked or shredded coconut plus extra to serve
4 Tbsp creamed honey plus extra to serve
½ tsp ground cinnamon
2 Tbsp sesame seeds plus extra to serve
4 Tbsp thick plain low-fat yoghurt
1 Granny Smith apple, cut into very fine batons, to serve
- In a large bowl, combine oats, coconut water, coconut, honey, cinnamon and sesame seeds. Cover and chill overnight.
- The next day, spoon yoghurt on top or stir through. Top muesli with extra sesame seeds, extra coconut, extra honey, if using, and apple to serve.
