1¼ cups plain flour
1 cup rolled oats
¼ cup finely chopped sultanas
1 cup moist coconut flakes
⅔ cup brown sugar
125 g butter, chopped
¼ cup golden syrup
1 tsp bicarb soda mixed with 2 tablespoons boiling water
- Preheat the oven to 160°C (140°C fan forced). Line two flat baking trays with baking paper. Sift flour into a large bowl and add oats, sultanas and coconut flakes. Mix well and stir in the brown sugar.
- Place the butter and golden syrup into a small pan and heat until mixture is combined. Remove from heat and stir in the bicarb mixture. Add the hot mixture to the dry ingredients and stir until combined.
- Shape tablespoon portions of the mixture into balls and place onto the baking trays. Space the biscuits apart. Press flat with a fork. Bake for 10 min until golden. Cool on trays for 5 min then transfer to a rack. Store in an airtight container.
