Cranberry, apricot & chia balls
Cook: 90 Minutes - easy - Makes 34 - Vegetarian - Vegan - gluten-free - dairy-free - egg-free - pregnancy-safe

These healthy and delicious energy balls are great to have stored in the fridge for a snack or even give as gifts

Ingredients

170 g packet dried cranberries

1 cup dried apricots (180 g)

¼ cup maple-flavoured syrup

2 tbsp orange juice

1½ cups almond meal

⅓ cup black chia seeds

2 tbsp cocoa powder

1¾ cups desiccated coconut

Method

  1. Place cranberries and apricots in a food processor. Process 
until finely chopped. Add syrup 
and juice. Process until mixture 
is smooth.
  2. Add almond meal, seeds, cocoa and ½ cup of the coconut. Process until combined. Transfer to a bowl.
  3. Using clean, damp hands, roll level tablespoons of mixture 
into balls. Roll in remaining 
coconut, pressing firmly to coat. Refrigerate, covered, for about 
1 hour, or until firm.
