Ingredients
170 g packet dried cranberries
1 cup dried apricots (180 g)
¼ cup maple-flavoured syrup
2 tbsp orange juice
1½ cups almond meal
⅓ cup black chia seeds
2 tbsp cocoa powder
1¾ cups desiccated coconut
Method
- Place cranberries and apricots in a food processor. Process until finely chopped. Add syrup and juice. Process until mixture is smooth.
- Add almond meal, seeds, cocoa and ½ cup of the coconut. Process until combined. Transfer to a bowl.
- Using clean, damp hands, roll level tablespoons of mixture into balls. Roll in remaining coconut, pressing firmly to coat. Refrigerate, covered, for about 1 hour, or until firm.
