Creamy cinnamon pudding
Cook: 75 Minutes - easy - Serves 4 - Vegetarian - gluten-free - egg-free - pregnancy-safe

Topped with maple and pecan sauce, this creamy cinnamon rice pudding is a dessert dream.

Ingredients

1 cinnamon quill

¾ cup medium-grain rice

⅓ cup caster sugar

3½ cups milk

2 cups water

Maple pecan syrup

50 g unsalted butter

½ cup maple syrup

¾ cup chopped pecans

⅓ cup pure cream

Method

  1. Place all ingredients in 
a large saucepan.
  2. Bring to boil. Gently simmer, uncovered, stirring frequently, for about 
45 to 50 minutes, 
or until tender. Discard cinnamon.Drizzle with maple pecan syrup.
  3. To make maple pecan syrup, boil butter, maple syrup and chopped pecans in a frying pan for about 3 minutes, or until thickened. Stir in pure cream.
