1 kg Cream Delight potatoes
1 cup whole-egg mayonnaise
1 crushed clove garlic
1 tbsp lemon juice
¼ cup finely chopped fresh chives, plus extra to serve
¼ cup finely chopped fresh parsley
- Cut potatoes into thick slices. Boil, steam or microwave until tender. Drain. Cool.
- Combine whole-egg mayonnaise, garlic, lemon juice and season. Toss dressing with potatoes, chives and parsley. Garnish with extra chives, to serve.
