¼ cup sweet plum marinade
¼ cup water
600 g pork mince
1 bunch broccolini finely chopped
1 package rice paper rounds (or large pappadums) to serve
- In a jug, combine ¼ cup each sweet plum marinade and water with 2 teaspoons cornflour. Heat a non-stick wok or pan over medium to high heat and brown 600g pork mince. Pour over sauce mix and increase heat, stirring until thickened. Add a bunch finely chopped broccolini, including stems. Remove from heat.
- Spoon into bowls and serve with cooked rice papers or large pappadums. Garnish with shredded fresh vegetables if desired. Serve with sweet chilli or soy sauce.
