300 g butter, softened
3½ cups pure icing sugar, sifted
2 tablespoons milk
2 teaspoons vanilla extract
1 x 24cm chocolate cake (or vanilla)
1 x 18cm chocolate cake (or vanilla)
1 package ready to roll fondant icing to decorate
1 container coloured sprinkles (cachous) to decorate
1 toy crown to decorate
- Place the butter into a large bowl and beat with electric beaters for 8 min or until very pale and creamy.
- Add the icing sugar, milk and vanilla extract, and beat on low speed to combine. Increase speed to medium and continue to beat for 6 min or until the frosting is fluffy. Add a few drops of blue food colouring to the mixture (or your desired colour) and beat to combine.
- Trim the cakes if needed. Place large cake onto a cake stand or plate. Spread ¼ cup icing mixture in the centre of cake then place smaller cake on top. Using remaining frosting, spread over top and sides of cake, smoothing the surface with a spatula. Decorate as pictured, with Fondant Decorations and cachous. Place the small crown on top if desired.
