Ingredients
175 g packet Cheddar crackers
500 g chicken mince
1 egg
¼ cup shredded baby spinach
drained 125 g can corn kernels
Method
- Crush 175g packet cheese shapes in a food processor. Place ⅓ cup in a bowl. Set remaining biscuits aside.
- Add 500g chicken mince, 1 egg, ¼ cup shredded baby spinach and a drained 125g can of corn kernels to the bowl. Mix, and using wet hands, roll 1-tablespoon portions of the mixture into balls. Coat in remaining crushed biscuits. Place on a lined baking tray. Repeat with all the mix and biscuits. Chill until required.
- Bake at 180°C for 12-15 min, or shallow-fry until cooked through. When cooked, insert a clean paddle pop stick into the centre of each to serve. Accompany with Greek salad, and sauce of your choice.
