Ingredients
2 x 250g packets microwave basmati rice
1 chicken stock cube (10g)
1 tablespoon vegetable oil
1 tablespoon fresh ginger paste
1 tablespoon mild curry powder
2 tablespoons lemon juice
1½ cups bhuja original mix (150g)
Shredded fresh mint, to garnish
Lemon wedges, to serve
RAITA
200g tub tzatziki
1 tablespoon finely chopped fresh mint
½ teaspoon ground cumin
Method

To make raita, combine all ingredients in a small bowl. Season with salt and pepper. Mix well.

Place uncooked rice in a bowl. Crumble with your fingers to separate grains. Dissolve stock cube in 1½ cups of boiling water in a heatproof jug.

Heat oil in a large frying pan over a medium to low heat. Add ginger and curry powder. Stir for about 1 minute, or until fragrant. Stir in rice. Add stock. Bring to boil.

Gently boil, stirring occasionally, for about 7 minutes, or until liquid is almost absorbed. Stir in juice. Gently boil for a further 2 to 3 minutes, or until all liquid is absorbed. Remove from heat. Stir in bhuja mix.

Serve Indian rice dolloped with raita. Sprinkle with mint. Serve with lemon wedges.
TIP! Majans Bhuja Original Mix contains crunchy nibbles (yellow peas and chick peas), as well as garden peas, peanuts and sultanas in a spicy mix. It’s available in the snack aisle of supermarkets.
