3 small Lebanese cucumbers cut in half lengthways
⅓ cup crumbled Danish feta
2 tsp chopped parsley
2 tsp chopped dill
- Slice 3 small Lebanese cucumbers in half lengthways. Scoop out and discard the seeds. Finely dice two of the cucumber halves and place in a bowl with ⅓ cup crumbled Danish feta and 2 teaspoons each chopped parsley and dill. Slice a strip off the base of each cucumber so they sit flat then fill each half with filling. Cut into slices.
