1 tbsp olive oil
8 thin beef sausages
1 onion, finely chopped
¼ cup rogan josh curry paste
500 g jar tomato pasta sauce
½ cup boiling water
Salt and pepper, to taste
150 g green beans, trimmed, halved
1 cup frozen peas
½ cup chopped fresh coriander
Steamed rice and tzatziki, to serve
Fresh coriander leaves, to garnish
White rice, to serve
- Heat half the oil in a large frying pan over a medium heat. Add sausages. Cook, turning occasionally, for 10 minutes, or until browned. Remove. Cool. Cut each sausage diagonally into four pieces.
- Heat remaining oil in same pan. Add onion. Cook, stirring, until soft. Add paste. Cook, stirring, for 1 minute, or until fragrant. Return sausages to pan with pasta sauce and water. Season with salt and pepper. Bring to boil. Simmer, covered, for about 5 minutes, or until sausages are cooked through and sauce is slightly thickened.
- Add beans and peas. Cook, uncovered, for a further 3 minutes, or until tender. Stir in coriander.
- Serve over rice with tzatziki. Garnish with coriander leaves.
