350 g dark chocolate, finely chopped
6 eggs, separated
150 g unsalted butter, at room temperature
50 ml orange-flavoured liqueur
2 Tbsp caster sugar
200 ml pure cream
500 g strawberries, hulled, sliced
Extra 2 Tbsp caster sugar
Extra 2 Tbsp orange-flavoured liqueur
¼ cup shaved dark chocolate block to garnish
- Put chocolate in a heatproof bowl over a saucepan of simmering water. Cook, stirring occasionally, for 5 minutes or until melted and smooth. Add yolks, butter and liqueur and stir to combine. Remove from heat.
- Put eggwhites in a large bowl and beat, using an electric hand mixer, for 5 minutes or until soft peaks form. Gradually add sugar and beat for a further 5 minutes or until thick and shiny. Pour cream into a second bowl and beat until soft peaks form. Fold eggwhite mixture, then cream through chocolate mixture. Spoon among six ¾-cup capacity glasses.
- Put sliced strawberries, extra sugar and liqueur in a bowl and toss to combine. Cover and refrigerate mousse and strawberry mixture for 1 hour or until mousse is set. Spoon strawberry mixture among mousses and garnish with shaved chocolate. Serve.
