1 ½ cups pitted dried dates chopped (255 g)
125 g unsalted butter chopped
⅓ cup water (80 ml)
¼ cup honey (60 ml)
¾ cup toasted fruit muesli (120 g)
2 granny smith apples (280 g)
1.25 cups wholemeal self-raising flour (200 g)
1 egg lightly beaten
- Grease an 18cm x 28cm slice pan. Line base and sides with baking paper, extending paper 2cm above pan edges.
- Place dates, butter, water and honey in a large saucepan. Cook, stirring occasionally, over a medium heat, until butter is melted. Bring to boil. Simmer, uncovered, for about 3 minutes, or until dates are soft. Transfer to a large bowl. Stir in muesli. Cool.
- Peel, core and coarsely grate apples. Stir into muesli mixture with flour and egg. Spread evenly into prepared pan.
- Cook in a moderate oven (180C) for about 25 minutes, or until cooked when tested. Remove. Stand for 10 minutes. Transfer to a wire rack to cool. Cut into bars.
