1 1/2 cups warm milk
1 teaspoon instant dried yeast
2 teaspoons caster sugar
2 1/2 cups plain flour
1/2 teaspoon salt
1/2 teaspoon bi-carb soda
Melted butter for cooking
Place warm milk, yeast and caster sugar in a jug and stir to combine. Cover with cling film and leave to stand for 10 minutes.
Place plain flour, salt and yeast mixture into the bowl of an electric mixer and using the dough hook attachment, mix on medium power until smooth. Cover mixture with cling film and leave to rise for one hour.
Place water and bi-carb soda in a jug and mix to combine.
Once the dough has finished resting, make a well in the centre of it and pour in the water and bi-carb mixture. Mix again using the electric mixture with dough hook attached until just combined.
Heat large frypan over medium heat and brush bottom of pan with melted butter. Place four egg rings into the pan and spoon in 2-3 tablespoons of dough batter, until the rings are filled. Cook for a few minutes until golden brown, remove egg rings and then flip to cook the other side.
Serve immediately, with your choice of topping.
