1 cup golden syrup
100 g dark cooking chocolate, grated
2 oranges, zest finely grated
150 g unsalted butter
175 g dark brown sugar
1 tsp vanilla extract
200 g self-raising flour
2 Tbsp cocoa powder
125 ml milk
150 g sour cream
410 g can sliced peaches, drained
1 tub vanilla ice-cream, to serve
- Whisk golden syrup, chocolate and zest in a large bowl. Pour into a 20cm microwave-safe ring mould.
- Put butter and sugar in the bowl of an electric mixer and beat until light and creamy. Beat in eggs and vanilla until smooth. Sift flour and cocoa together. Fold into mixture while alternately adding milk and sour cream. Stir until smooth.
- Spoon mixture over golden syrup mixture, cover with paper towel, then microwave on 100% (high) for 9 minutes or until just firm. Set aside for 1 minute, then turn out. Cut into wedges and serve topped with peaches and serve with ice-cream.
