750 g chopped chicken thigh fillets
¾ cup buttermilk
1½ cups dried breadcrumbs
1 teaspoon all-purpose seasoning
1 teaspoon mixed herbs
- Place 750g chopped chicken thigh fillets into a bowl, pour over ¾ cup buttermilk and stir to coat. In a bowl, combine 1½ cups dried breadcrumbs and 1 teaspoon each all-purpose seasoning and mixed herbs. Coat the chicken pieces in breadcrumb mixture and place on lined baking trays. Spray chicken with oil.
- Bake at 200°C (180°C fan-forced) for 15-20 min. Serve with a side salad, dipping sauces and shoestring fries.
