They’re not just good poached on toast! Turns out, eating cooked eggs alongside a bowl of vegies could help enhance your absorption of carotenoids, pigments found in brightly hued plants that boffins believe are crucial for good eye health.
During a small study, published in The American Journal of Clinical Nutrition, one group ate a salad without egg, another consumed the same greens topped with 1.5 scrambled whole eggs, while the third downed the salad with three eggs. The group that ate the most eggs with their vegies increased absorption of carotenoids significantly. So how can it benefit you? Supercharge a salad of carrots, tomatoes and capsicums with a few slices of boiled egg—or mix in scrambled if you prefer. Your next brunch, sorted!
