When you're struggling with the afternoon lull, reach for an energy ball to see you through!
250 g packet pitted dates, chopped
⅓ cup Milo
⅓ cup water
2 cups Rice Bubbles
½ cup almond meal or LSA
¼ cup desiccated coconut
Extra ½ cup Milo, for coating
- Combine dates, Milo and water in a large saucepan. Stir over a medium heat for about 3 minutes, or until a smooth paste forms. Transfer to a large bowl. Cool.
- Add Rice Bubbles, almond meal (or LSA, if using) and coconut. Mix until well combined.
- Using wet hands, roll tablespoons of mixture into balls. Place on a large tray lined with baking paper. Roll balls in extra Milo to coat. Return to tray. Refrigerate until firm.
