This white-style rocky road looks every bit the festive sweet. They look great on a sweets buffet table on Christmas day, or as an edible Christmas gift.
2 x 180 g blocks white cooking chocolate, chopped
250 g white marshmallows, halved
¾ cup glace cherries, halved
1 cup chopped pistachios, lightly toasted
- Line an 18cm x 28cm pan with baking paper. Melt chocolate and let cool. Add marshmallows, cherries and ¾ cup of the pistachio nuts. Mix well.
- Spread the mixture into the prepared pan and sprinkle with the remaining pistachio nuts. Refrigerate until set. Cut into pieces to serve.
