500 g fresh white boneless fish fillets, such as flathead
2 garlic cloves, crushed
3 pieces kaffir lime leaf, shredded
2 spring/green onions, chopped
1 tablespoon red curry paste
3 green beans, finely sliced
- Roughly chop fish and place in a food processor, add garlic, shredded lime leaf, half the spring/green onions and curry paste. Pulse until combined.
- Transfer to a bowl and add remaining spring/green onions and green beans. Dust hands with cornflour, divide into 12 portions. Shape each into a ball and flatten slightly.
- Heat vegetable oil in a non- stick pan and fry patties a few at a time until golden brown. Serve with sweet chilli sauce and lime wedges.
