500 g pork fillet
1 chopped garlic clove
1 medium deseeded and chopped red chilli
2 finely shredded kaffir lime leaves
2 Tbsp lime juice
2 Tbsp soy sauce
½ cup torn Thai basil, optional
6 cups mixed asian salad leaves
100 g packet fried noodles, to garnish
- Season pork fillet with pepper. Heat a wok over medium heat and add a little olive oil and half the pork, with half the garlic and chilli. Set aside and repeat with remaining pork, garlic and chilli.
- Return all to the wok and add kaffir lime leaves, lime juice and soy sauce. Toss to combine. Add Thai basil leaves, if using. Serve over mixed salad leaves and top with crispy noodles or serve with steamed rice.
