3 tomatoes, cut, quartered, seeds removed, finely diced
2 pieces char-grilled red capsicum, finely diced
½ red onion, finely diced
2 tbsp finely sliced mint leaves
2 tbsp finely sliced basil leaves
Salt and cracked black pepper, to season
2 tbsp extra virgin olive oil
1 ciabatta loaf
¼ cup extra virgin olive oil, extra
1 garlic clove, crushed
- Put tomatoes, capsicum and red onion in a bowl and stir to combine. Add mint and basil, season and stir until combined. Spoon into a serving bowl and drizzle with extra virgin olive oil.
- Heat a char-grill plate over a medium heat. Cut bread into 1cm-thick slices. Combine extra oil with garlic. Lightly brush each side of bread with oil mixture and grill until golden on both sides. Serve with salsa.
