Funfetti patty cakes
Cook: 35 Minutes - easy - Makes 12 - Vegetarian - nut-free - pregnancy-safe

These colourful mini cakes are topped with hundreds and thousands and can be made in 35 minutes - perfect for any last-minute forgotten birthday surprises!

Ingredients

1 ½ cups self-raising flour

1 tbsp cornflour

125 g softened butter

1 cup caster sugar

2 eggs

½ cup milk

2 tbsp honey

½ cup hundreds and thousands (or preferred sprinkles)

Method

  1. Preheat the oven to 180°C (160°C fan forced). Line 12 holes of a muffin pan (⅓-cup capacity) with paper cases.
  2. Combine the first six ingredients in a large bowl. Using electric beaters, beat for 4 min. Spoon mixture among the paper cases. Bake for 20-25 min or until cakes are cooked when tested with a skewer.
  3. While the patty cakes are still warm, brush tops with the honey and dredge in 100’s and 1000’s to coat. Cool on a wire rack before serving.
