400 g dried fusilli
1 tsp olive oil
150 g bacon, chopped
2 red onions, cut into wedges
Salt and freshly ground black pepper, to season
½ cup chopped chives
200 g blue cheese, chopped
- Cook fusilli in a large saucepan of boiling water following pack instructions. Drain.
- Meanwhile, heat oil in a large frying pan over a medium-high heat. Add bacon and cook for 3-4 minutes. Add onion and cook until transparent. Add cooked fusilli and stir to combine, then season and add chives. Scatter over blue cheese and serve.
