5 zucchini, sliced diagonally
1 Tbsp olive oil
20 g butter
2 cloves garlic, crushed
Sea-salt flakes and freshly ground black pepper, to season
- Bring a medium saucepan of water to the boil. Add zucchini and cook for 2-3 minutes or until just tender. Drain and set aside.
- Heat oil and butter in same pan over a medium heat. When butter has melted, add garlic and cook for 1 minute. Return zucchini to pan. Cook for 2 minutes or until light golden. Season, then serve.
