¾ cup brown sugar
125 g butter, softened
1 egg, lightly beaten
2 teaspoons vanilla essence
1 cup rolled oats
1½ cups plain flour
⅔ cup mixed lollies (we used jubes, M&M’s and Smarties)
- Preheat oven to 180°C (160°C fan forced). Line 2 baking trays with baking paper. Place sugar and butter in a medium bowl and cream together with an electric mixer until pale. Add the egg and vanilla, then beat a further 1 min.
- Add the oats and flour, using a wooden spoon to combine. Use 2 tablespoons of mixture to form balls with your hands. Place on the prepared trays, leaving room for spreading. Flatten lightly with your hand.
- Press lollies into each biscuit and bake 10-15 min or until golden. Cool on tray 10 min before transferring to racks to cool completely.
