250 g unsalted butter, cubed
250 g dark brown sugar
250 g golden syrup
1 tsp ground cinnamon
1 tsp finely ground black peppercorns
2 tsp ground ginger
1 tsp vanilla bean paste
finely grated zest 1 lemon
finely grated zest 1 orange
400 g self-raising flour
1 tsp baking powder
Preheat oven to 160ºC (fan-forced) and line 3-4 baking trays with baking paper.
- Place butter, sugar, golden syrup and spices into Thermomix bowl and cook 7 min/100ºC/speed 3. Add remaining ingredients and blend 40 sec/speed 8. Spread out onto a silicone mat or piece of baking paper to cool down quickly.
- Make small balls, about the size of a walnut and place evenly on prepared trays. Place a piece of baking paper over each biscuit and press with your TM 31 MC or the bottom of a glass to flatten into a nice round shape (the baking paper will help prevent the dough sticking to the MC or glass).
- Bake for 20 minutes or until dark brown. Leave in the switched off oven to harden… if you want to crack a tooth… the longer the better!
