Ginger Nut Biscuits (Thermomix)

These little gems are totally perfect in every way. Cue the tea (and possibly have the dentist on speed dial, depending on how old you are). Just as authentic as can be, totally cannot stop at one, so brace yourself. Luckily it makes a LOT.

These little gems are totally perfect in every way. Cue the tea (and possibly have the dentist on speed dial, depending on how old you are). Just as authentic as can be, totally cannot stop at one, so brace yourself. Luckily it makes a LOT.

Ingredients

250 g unsalted butter, cubed

250 g dark brown sugar

250 g golden syrup

1 tsp ground cinnamon

1 tsp finely ground black peppercorns

2 tsp ground ginger

1 tsp vanilla bean paste

finely grated zest 1 lemon

finely grated zest 1 orange

400 g self-raising flour

1 tsp baking powder

Method

  1. Preheat oven to 160ºC (fan-forced) and line 3-4 baking trays with baking paper.

  2. Place butter, sugar, golden syrup and spices into Thermomix bowl and cook 7 min/100ºC/speed 3. Add remaining ingredients and blend 40 sec/speed 8. Spread out onto a silicone mat or piece of baking paper to cool down quickly.
  3. Make small balls, about the size of a walnut and place evenly on prepared trays. Place a piece of baking paper over each biscuit and press with your TM 31 MC or the bottom of a glass to flatten into a nice round shape (the baking paper will help prevent the dough sticking to the MC or glass).
  4. Bake for 20 minutes or until dark brown. Leave in the switched off oven to harden… if you want to crack a tooth… the longer the better!
