4 x 180 g salmon fillet pieces (skin on)
2 tbsp finely chopped ginger
½ cup teriyaki stir-fry sauce
2 bunches broccolini
1 cup long-grain white rice
- Coat salmon in 2 tbsp ginger. Cook salmon, flesh-side down, in an oiled frying pan over a medium-high heat for about 3 to 4 minutes on each side, or until cooked to your liking. Pour 1/2 cup teriyaki marinade over salmon. Cook for 1 minute.
- Boil, steam or microwave broccolini until tender. Cook 1 cup rice according to packet directions. Serve salmon with broccolini and rice. Pour over marinade from pan.
