1 banana, peeled, chopped
1 cup coconut water
2 cups torn cavolo nero kale leaves
1 cup diced pineapple
1 cup diced mango
½ cup mint leaves plus extra to serve
- Put banana in a small zip-lock bag and freeze for 6 hours or overnight.
- Remove banana from freezer and set aside for 5 minutes. Put in a blender with coconut water, kale, fruit and mint, then process until smooth. Pour into glasses and garnish with mint. Serve immediately.
