500 g cauliflower florets, coarsely grated
1 egg, lightly beaten
40 g parmesan, finely grated
½ tsp dried oregano
Sea-salt flakes and freshly ground black pepper, to season
- Put cauliflower in a heatproof bowl and cover with plastic wrap. Microwave on high/100% for 6 minutes or until just tender. Transfer to a fine sieve, then set aside to allow cauliflower to drain and cool to room temperature.
- Preheat oven to 220°C. Line pizza tray with baking paper. Combine cauliflower, egg, parmesan and oregano in a large bowl, then season with salt and pepper. Spoon into prepared tray.
- Bake for 15 minutes or until edges turn golden. Remove from oven, then add toppings following your favourite pizza recipe and cook as per recipe.
