1 Tbsp butter to grease
2 x 500 g bags mini potatoes
2 Tbsp extra virgin olive oil
2 Tbsp garlic butter spread
- Preheat oven to 200°C. Grease a large oven tray with butter. Microwave potatoes following pack instructions. Open bag and allow potatoes to cool slightly.
- When cool enough to handle, squash potatoes using palm of your hand. Put on prepared tray and drizzle with oil. Roast for 25 minutes or until golden and crisp. Transfer to a serving platter. Spoon over garlic spread. Serve.
