24 small button mushrooms, cleaned
2 tablespoons olive oil
120 g gorgonzola cheese or other blue cheese, crumbled
- Preheat the oven to 190°C (170°C fan forced). Line a baking tray with baking paper.
- Remove and discard stems from mushrooms. Brush the mushrooms all over with olive oil and place cavity side up on the baking tray. Season with freshly ground black pepper and fill the centre of each mushroom with crumbled cheese.
- Place the baking tray into the oven and bake for about 10 min or until bubbling and browned. Garnish with chopped parsley and serve on a platter.
