400 g green beans, trimmed, halved crossways
400 g sugar snap peas, trimmed
100 g Danish feta, crumbled
⅓ cup fresh mint leaves
2 tbsp extra virgin olive oil
2 tbsp lemon juice
1 small clove garlic, crushed
2 tbsp shredded fresh mint leaves
Salt and pepper, to taste
- Bring a large saucepan of lightly salted water to boil. Add beans. Boil for 2 minutes. Add peas. Boil for a further 1 minute, or until just tender. Drain.
- To make dressing, whisk all ingredients in a small jug until combined.
- Serve hot beans and peas drizzled with dressing. Sprinkle over feta and mint leaves.
