This finger-licking sauce on this popcorn chicken is to die for! And by baking the popcorn chicken in the oven, it's SO much healthier!
500g chicken breast, cut into cubes
1 cup plain flour
2 eggs, beaten
2 cups panko breadcrumbs
1 tablespoon vegetable oil
1 clove garlic, crushed
2 tablespoons soy sauce
2 tablespoons sriracha sauce
2 tablespoons honey
3 tablespoons water
Chopped spring onions and chilli flakes (optional) to serve
Line large tray with baking paper.
Place flour, eggs and breadcrumbs into separate bowls. Taking one piece of chicken at a time, dip in flour, eggs then breadcrumbs until all pieces are coated.
Place chicken pieces on prepared tray and bake at 200c for 15 minutes.
While the chicken is cooking, place oil and garlic in a small saucepan until fragrant. Then add soy sauce, sriracha, honey and water and boil for 3 minutes.
Tip cooked chicken into a bowl and then pour sauce over the top. Toss to coat.
Serve with rice, and top with spring onions and chilli flakes.
