3/4 cup pure cream
2 tablespoons French mustard
Salt and pepper
1/4 cup melted butter
6 frozen crepes, thawed
1 cup parmesan cheese
12 thin slices of ham
4 large slices of Swiss cheese
1 cup grated mozzarella cheese
3/4 cup mozzarella cheese, extra.
Grated parmesan, extra, and thyme leaves to serve
In a large jug, add eggs, cream, mustard, salt and pepper and whisk to combine.
Brush bottom and sides of a heavy-based small frypan with melted butter. Add one crepe, then top with a 1/4 cup of the egg mixture. Sprinkle with a little parmesan. Top with three slices of ham, then a slice of Swiss cheese and a small handful of mozzarella. Repeat process with remaining crepes.
After placing the last crepe down, top with remaining egg mixture and top with the 3/4 cup of extra mozzarella.
Place in a 200c oven for 35 minutes. Cut into pie slices and top with extra parmesan and thyme leaves to serve.
