Cooking oil spray
2 x 85g packets chicken-flavoured 2-Minute noodles
200g shaved leg ham, coarsely chopped
2 green spring onions, thinly sliced
1 cup grated Tasty cheese
300g can creamed corn
1/3 cup milk
1 small tomato, finely chopped
Salad leaves, to serve
Lightly spray two x 6-hole silicone muffin trays (1/2 cup-capacity) with cooking oil.
Break noodle cakes into small pieces. Add noodles and contents of flavour sachets to a large saucepan of boiling water. Boil for 2 minutes. Drain. Transfer to a large bowl. Cool for 15 minutes.
Spray a medium frying pan with cooking oil. Heat over a medium to high. Add ham. Cook, stirring for about 3 minutes, or until light golden. Add to noodles. Toss to combine.
Divide noodle mixture evenly among muffin trays. Sprinkle with onions and cheese.
Whisk eggs, corn and milk together in a large jug. Season with salt and pepper. Pour evenly over noodle mixture.
Gently tap trays on bench to allow egg mixture to run through noodles and fill holes. Top with tomato. Place muffin trays on an oven tray
Cook in a moderate oven (180C) for about 30 to 35 minutes, or until set and golden.
Serve warm frittatas with salad leaves.
