¼ cup olive oil
800g brushed potatoes, peeled, cut into 1.5cm pieces
150g bacon rashers, rind removed, finely chopped
1 onion, finely chopped
4-pack beef burger patties (500g)
500g jar napoletana pasta sauce
1 cup Perfect Italiano Perfect Bakes grated cheese
1 tablespoon chopped fresh parsley
Heat 2 tablespoons of the oil in a large, non-stick frying pan over a medium heat. Add potatoes, bacon and onion. Cook, stirring for about 15 to 18 minutes or until potatoes are tender and golden. Season with salt and pepper. Remove from pan.
Add remaining oil to same hot pan. Add patties. Cook, for about 2 minutes on each side, or until browned. Transfer to a rectangular ovenproof dish (20cm x 26cm x 5cm). Spoon over pasta sauce.
Top with potato mixture. Make four indents in the potato mixture, on top of each patty. Break an egg into each indent. Sprinkle cheese around eggs.
Cook in a moderately hot oven (190C) for about 20 to 25 minutes or until patties are cooked through and eggs are cooked to your liking.
Serve sprinkled with parsley.
