Healthy Christmas pudding ice-cream

Frozen, processed bananas are the base for this healthy post-Christmas dessert

Ingredients

4 peeled bananas, frozen

½ cup leftover Christmas cake or pudding, chopped

6 mini ice cream cones

½ cup caramel sauce to serve

½ cup leftover salted roasted mixed nuts chopped to serve

Method

  1. Remove bananas 
from freezer and set 
aside for 5 minutes.
  2. Chop bananas and 
put in the bowl of a 
food processor. Process 
until almost smooth. 
Add cake or pudding 
and process until smooth. Transfer to a freezer-proof bowl and freeze for 
30 minutes or until firm enough to scoop.
  3. Scoop banana ice-cream into cones, drizzle with caramel sauce, scatter with nuts, then serve immediately.
