4 peeled bananas, frozen
½ cup leftover Christmas cake or pudding, chopped
6 mini ice cream cones
½ cup caramel sauce to serve
½ cup leftover salted roasted mixed nuts chopped to serve
- Remove bananas from freezer and set aside for 5 minutes.
- Chop bananas and put in the bowl of a food processor. Process until almost smooth. Add cake or pudding and process until smooth. Transfer to a freezer-proof bowl and freeze for 30 minutes or until firm enough to scoop.
- Scoop banana ice-cream into cones, drizzle with caramel sauce, scatter with nuts, then serve immediately.
